Chicken Lo Mein

Ingredients

The Sauce

Instructions

  1. Make the sauce: In a small bowl, mix the cornflour and dark soy sauce together until lump free. Add the rest of the sauce ingredients, mix well and then set aside.

  2. Prepare the chicken: Place the sliced chicken into a bowl and add 3-4 tsp of the prepared sauce. Mix well to ensure chicken is coated.

  3. Heat the oil in a wok over a high heat

  4. A onion and garlic and fry for 30 secs

  5. Add the chicken  and stir fry for around 1 minute

  6. Add the carrot and bell pepper and beansprouts. Continue to cook for 2 minutes

  7. Add the noodles, sauce and water. Using 2 spatulas or wooden spoons, toss together for a further 30 seconds.

  8. Add the green onions and continue tossing together for 30 seconds. Ensure the noodles are well coated with the sauce.

  9. Serve and garnish with extra green onions.

Note

Feel free to switch out the protein for beef, pork, prawns, turkey and tofu which all work well. Alternatively go all vegetable.
