Spicy Sausage & Halloumi Pasta with Smoky Chorizo

Description

An easy but delicious spicy sausage & halloumi pasta with smoky chorizo. Sausages, Halloumi and chorizo are fried until golden and mixed with a tasty smoky tomato sauce and rigatoni pasta in this family favourite dish.

Can be used as a cold pasta lunch the next day if there are any left overs!

  1. Heat the oil in a pan and fry the sausages & chorizo for 5-6 mins on a medium heat. Add Halloumi and fry until golden.
  2. Add onion and garlic for 3-4 minutes on a medium heat.
  3. Meanwhile, bring a pan of salted water to a boil and cook the pasta until al dente. Drain the pasta, reserving 1 cup of pasta cooking water for later, and set the pasta aside.
  4. Stir in the smoked paprika, chilli flakes and oregano and cook for 1 minute
  5. Stir in the passata, sugar and double cream (optional) and simmer on a low heat for 10 minutes.

Serving Suggestion

  1. Serve the halloumi chorizo pasta with a side of homemade Garlic Bread Sticks

Storage

  1. Store: Leftovers can be stored in an airtight container in the fridge for up to 3 days.
  2. Reheat: Reheat in the microwave until warm through. It's also nice to eat cold as pasta salad, making it a great recipe for lunchboxes and picnics!
  3. Freeze: The pasta can be frozen for up to 3 months. Defrost in the fridge before reheating in the microwave until piping hot.
